Ingredients

  • 1 lb salted cod fish
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 small onion, finely chopped
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 cup water (more if needed)
  • Vegetable oil for frying

Instructions

Prepare the Salted Cod

Rinse the salted cod under cold water to remove excess salt. Place it in a pot and cover with fresh water. Bring to a boil, then drain and repeat this process 2-3 times until the cod is sufficiently desalted.

Once desalinated, flake the cod into small pieces, removing any bones.

Prepare the Batter

In a large mixing bowl, combine the flour, baking powder, salt, black pepper, paprika, and cayenne pepper.

Add the finely chopped onion, green onions, minced garlic, thyme, and parsley. Mix well.

Gradually add the water, stirring continuously until you have a thick, smooth batter. If the batter is too thick, add a little more water.

Add the Fish

Fold the flaked salted cod into the batter, ensuring it is evenly distributed.

Fry the Fish Cakes

In a large skillet or deep fryer, heat vegetable oil over medium-high heat until hot.

Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry the fish cakes for about 3-4 minutes on each side, or until they are golden brown and crispy.

Use a slotted spoon to remove the fish cakes from the oil and place them on paper towels to drain any excess oil.
