Preheat your oven to 400°F (200°C).
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness using a meat mallet or rolling pin.
Season the chicken breasts with salt and pepper.
Place the flour in a shallow bowl, the beaten eggs in another bowl, and a mixture of breadcrumbs and grated Parmesan cheese in a third bowl.
Dredge each chicken breast in the flour, shaking off any excess, then dip it in the beaten eggs, and finally coat it in the breadcrumb mixture, pressing gently to adhere.
In a large skillet, heat the olive oil over medium-high heat. Add the breaded chicken breasts and cook for about 3-4 minutes on each side, or until golden brown and crispy. Transfer the chicken to a paper towel-lined plate to drain.
Place the cooked chicken breasts in a baking dish. Spoon marinara sauce over each piece, then sprinkle with shredded mozzarella cheese and dried oregano.
Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
Remove from the oven and sprinkle with fresh basil and chopped parsley. Serve hot with a side of pasta, salad, or steamed vegetables.
Enjoy your meal!
