Ingredients

  • 2 cups grated sweet potatoes
  • 1 cup grated fresh coconut
  • 1 1/2 cups brown sugar
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup raisins (optional)
  • Banana leaves or aluminum foil (for wrapping)

Instructions

Prepare the Mixture

In a large mixing bowl, combine the grated sweet potatoes, grated coconut, brown sugar, flour, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix well until all ingredients are thoroughly combined.

If using, stir in the raisins.

Wrap the Ducana

Cut the banana leaves into large rectangles, about 10x12 inches. If using aluminum foil, cut it into similar-sized pieces.

Place a portion of the sweet potato mixture onto each banana leaf or foil piece. Fold and wrap tightly to form a neat package.

Cook the Ducana

Bring a large pot of water to a boil. Carefully place the wrapped ducana packages into the boiling water.

Reduce the heat to medium-low and simmer for about 1 hour, or until the ducana is firm and cooked through.

Cool and Serve

Remove the ducana from the pot and let it cool slightly before unwrapping.
